A Passion That Found Him

Unlike many professionals who carefully plan their careers, Subhobrata believes bartending chose him rather than the other way around.

While pursuing Hotel Management at SBIHM, he started working at Big Ben, one of Kolkata’s oldest British pubs, in 2014. What began as practical exposure soon turned into a lifelong calling. The excitement wasn’t merely about preparing drinks. It was about conversations. It was about reading people. It was about creating memorable moments for complete strangers.

Very early in his career, he realised that bartending demanded far more than technical precision. It required hospitality, psychology, creativity, discipline and continuous learning. That realisation became the foundation of everything he has achieved since.

His professional journey took him through luxury hospitality brands like The Oberoi and Marriott before he consciously chose the world of independent bars—spaces that offered greater creative freedom.

That decision would eventually define his career.

One of the most remarkable aspects of Subhobrata’s journey is his refusal to become comfortable.

While many professionals become satisfied after securing a good position, he continued investing in knowledge. His WSET Level 2 certification strengthened his understanding of wines and spirits, while constant participation in national competitions sharpened his technical excellence.

Competitions, according to him, were never merely about winning trophies. They became classrooms. Every contest introduced new techniques, global trends, fresh perspectives and opportunities to learn from fellow professionals. That mindset explains why every achievement in his career appears to be a stepping stone rather than a destination.

Every successful creator eventually reaches a point where imitation no longer satisfies them. For Subhobrata, that moment became “In Search of Bengal.” As Bar Manager during the pre-opening of ØLTERRA, he asked himself a simple yet profound question:

“Why should Indian cocktails always borrow stories from somewhere else when Bengal itself has thousands waiting to be told?” The answer wasn’t found inside recipe books. It lay outside cities.

He travelled extensively across West Bengal—covering villages, forests, coastal belts, farms, hills and bustling local markets. He interacted with farmers, fishermen, indigenous communities, artisans and local producers. He wasn’t merely collecting ingredients. He was collecting stories.

He studied forgotten herbs, seasonal fruits, traditional preservation methods, local beverages and indigenous flavours that had quietly survived for generations but rarely found space in contemporary hospitality.

The outcome became one of Kolkata’s most celebrated cocktail menus.

More Than Ingredients—A Cultural Archive

What makes “In Search of Bengal” extraordinary is that it wasn’t driven by novelty alone. Many cocktail programs focus on unusual ingredients simply to surprise guests.

Subhobrata’s approach was fundamentally different. Every ingredient carried historical, geographical or emotional significance. Every cocktail attempted to preserve memory while presenting it through modern techniques. Over two successful editions, the project explored 13 cities across West Bengal, documenting forgotten ingredients, endangered flavours and local traditions before bringing them to life inside sophisticated contemporary cocktails.

The menu soon gained national attention through collaborative bar takeovers across India and contributed significantly to ØLTERRA being recognised among India’s 30 Best Bars. Recognition followed naturally. Because authenticity cannot be manufactured.

Outside work, he consciously makes time to learn, reflect and recharge, understanding that creativity flourishes only when the mind remains uncluttered. Interestingly, “In Search of Bengal” has now reached what Subhobrata calls its natural conclusion. Having documented the stories they intended to tell across Bengal, he believes repeating the same narrative would only dilute its purpose. Instead, the next chapter promises something entirely different. A broader canvas. New cultures. New landscapes. New stories.

While he remains intentionally discreet about future projects, one thing is evident—his journey of discovery has only changed direction, not destination. If Bengal was the first chapter, the next promises to expand the map.
